
The Piemontese salad has a misleading energy density. Behind a dish perceived as a simple summer salad, the combination of potatoes, mayonnaise, and cold cuts significantly concentrates macronutrients. Understanding the actual caloric distribution, item by item, allows for adjusting the portion and composition without giving up the dish.

Calories in Piemontese salad per 100 g: decoding the differences between versions
The published nutritional values vary greatly depending on the source, and this dispersion is not anecdotal. It reflects fundamentally different recipes.
A traditional Piemontese salad with superior ham hovers around 156 kcal per 100 g, with about 11 g of fat, 7.4 g of carbohydrates, and 6.4 g of protein. This profile corresponds to a standard industrial version, mayonnaise included.
A revamped protein-oriented version, with turkey breast, low-fat cheese, and 8% fat St Moret sauce, drops to around 96 kcal per 100 g while increasing to 9 g of protein. The protein/calorie ratio improves significantly.

We recommend weighing the portion at least once to visually calibrate the amount, then adjusting the composition of dinner accordingly. A dinner focused on vegetables and lean proteins after a Piemontese salad at lunch is usually sufficient to maintain the day’s energy balance.

Modify the recipe without altering the dish: substitutions that change the balance
Not all substitutions are equal. Replacing mayonnaise with plain Greek yogurt radically changes the texture and adherence of the sauce to the potatoes. The skyr, mustard, and apple cider vinegar mix offers the best texture-calorie compromise among common alternatives.
